A Look at the History of Slow Cooking


Crock pots are in almost every kitchen. They sit on the counter or hidden away in a cupboard, collecting dust unless we are really strapped for time. In actuality, slow cooking has been used to prepare meals for hundreds of years. Today is so much easier; it is amazing this method is not used more often.

Ancient History

Slow cooking has been around ever since people figured out how to make an iron pot. One could be hung over a fire for many hours while food simmered in it, or a smaller one could be filled with ingredients and buried in the coals to cook. People have long known the benefits of slow cooking their food. The obvious detriment to these methods was the attention it took tending the fire all day and stirring the contents of the pots.

Cooking on a low heat for many hours tenderizes tough meats through the softening of the fibers. The natural collagen also melts, creating a tender, delicious meal that is full of gelatin and nutrition. Long cooking times may also be beneficial to tough root crops, rendering them more digestible. Dried beans and lentils also benefit from a long cooking time on low heat.

The Birth of the Crock Pot

The Naxon Utilities Corporation in Chicago developed what we recognize as a slow cooker in the 1950s. They called their new pot the Beanery All Purpose Cooker. It was meant to help make baked beans. The Beanery was a ceramic pot situated inside a metal pan equipped with heating elements around the sides. This heated the ceramic pot evenly, while keeping the heat away from directly contacting the food.

Naxon was bought by Rival in 1970. The Beanery was reinvented as the Crock Pot. During the 1970s, more women were joining the workforce, and the Crock Pot helped them manage to feed their families as well. It was easy enough to fill it before they left for work and be able to come home to a hot meal.

As the years have progressed, so has the Crock Pot. Now they feature removable ceramic pots for easier cleaning and storage of leftovers. The old ones were a single piece, making cleaning difficult due to the attached electrical cord. The new ceramic liners are even dishwasher safe, making them even more convenient for busy families. Many of the newer slow cookers also feature a warming setting as well as Low and High. Some are electronic and will automatically switch to warm when the food is done.

Long ago, women cooked many different meals slowly over the fire. Today, our crock pots offer even more versatility. Stews, roasts and casseroles are very common meals that are made every day in the crock pot, but you can also make dishes like lasagna, sweet and sour chicken, and even your best chicken noodle soup recipes in your slow cooker.

The Story Of A Famous Dessert

We have two Englishmen to thank for the famous banoffee pie pudding. In 1972, after seeing a dish during his travel in the USA, chef Ian Dowding and the owner of the restaurant he worked in (Nigel Mackenzie) created this new pudding. The American dessert was known as Blums Coffee Toffee Pie and was similar to banoffee pie but had no bananas and tasted (unsurprisingly) like coffee. Dowding wasn't keen on the recipe though as it was difficult to perfect, stating that the pudding didn't set correctly all the time, either being too hard or too soft.

Together they adapted the idea to toffee and bananas and made up the word "banoffi", which has now turned into "banoffee" and is now part of the English language used to describe anything that tastes of banana and toffee. So they added the new Banoffee Pie to their menu and found it became so popular that diners would actually request table bookings only if this particular dessert was on the menu. In fact, it became so popular that they simply could not remove it from the menu.

It didn't take long before the local competition was copying the dessert, and just a few years after the initial concept it started turning up in Australia, America and even India. It's fair to say that these days banoffee pie is probably served somewhere in every country on the planet!

Below is a delicious recipe for making your own banoffee pie Ingredients

3 large bananas, 300 gram packet of digestive biscuits, 60 grams of butter, 350ml double cream, 1 tbsp of icing sugar, 100 grams of chocolate (to decorate), 397g tin of caramel

1. Turn the oven on to pre-heat at 180C/gas mark four. Put the butter in a pan and leave over a low heat to melt. While the butter melts crush the biscuits (a rolling pin or blender will do the trick. Failing that, just use your hands!). Once the butter's melted mix the biscuit crumbs and butter together in a bowl.

2. Pour the biscuit mix into a 20cm (ish) pie tin and press into an even layer to create the base.

3. Place in the oven and allow to cook for 10 minutes. Check the mixture has lightly toasted, if it hasn't give it a couple more minutes.When you are happy take the base out the oven and let it cool. Once cool, carefully transfer the base to a plate.

4. Once cooled, open the caramel and pour evenly over the base. Once level, put in the refrigerator for roughly 60 minutes.

5. Once chilled, slice the bananas and arrange them over the caramel.

6. Whip the cream and icing sugar to get it nice and thick, and then create the final unhealthy layer over the bananas.

7. Take the chocolate and use a grater to sprinkle some chocolate shavings over the cream for the final touch.

Good enough to eat

We are all familiar with vegetable flowers in the form of Cauliflower, Broccoli and Artichokes, but other, more ornamental flowers have been used in the cuisine of cultures all over the world for thousands of years. The Romans were keen on them, as were the ancient Chinese, and European medieval writings talk about feasts of venison cooked with marigolds and violets in salads.

Using peppery Nasturtium flowers in salads and sweet, perfumed rose petals in desserts is quite well known, but did you also know:

• The young shoots of Hostas are good spinach alternative – Hostakopita is a Greek spinach pie made with hosta shoots and in Japan nori maki sushi is filled with parboiled hosta shoots marinated in soy sauce, sugar & salt. They can also be steamed like asparagus. Only use young shoots though as older leaves are too tough.

• Hemerocallis – Day Lily – the flowers and buds have a sweet nutty flavour and look pretty in salads. (Don’t use other types of lilies though as they are poisonous!)

• Violets & Pansies – the sweet, fragrant flowers can be used in salads, desserts and drinks and can be crystallised for cake decoration.

• Sunflowers – we all know you can eat the seeds, but did you know you can also eat the buds & petals? The petals have a bitter-sweet taste and can be used in salads. The unopened buds can be steamed and have a flavour similar to artichokes.

• Lilac – the flowers have a floral, slightly lemony flavour and can be used in salads.

• Honeysuckle – the flowers have a sweet honey flavour and can be used as a garnish for salads and desserts. (Don’t eat the berries though as they are poisonous).

• Fuchsias – the vibrant flowers look great as a garnish.

• Campanula – the narrow leaves make a sweet addition to salads.

• Yucca – the white flowers have a thick and crunchy texture and a sweet flavour. Be careful of the spines at the tips of the leaves when picking though!

• Typha – Reed Mace – the young shoots taste similar to water chestnuts and the rhizome can be eaten raw or cooked, or dried and ground into flour!

• Even the humble Daisies and Dandelions in your lawn can be picked and used as garnishes.

N.B. It’s fun to use some of these more unusual edible garden plants, but do be careful you are sure what they are, as so many of our common garden plants are in fact poisonous. If in doubt, leave it out!

Also, never use insecticides or chemicals on plants you may want to eat, and make sure you wash them carefully first – not least to get rid of the creepy-crawlies!

Valentine’s Day is a time of year when romance is in the air, and what better way to celebrate than an evening out to dine with your beloved, or preparing and cooking them a delicious meal.

There are some foods that are synonymous with romance or considered huge aphrodisiacs. These are considered such foods for several reasons. One reason is that they have ingredients or minerals in them which is said to enhance sexual arousal or stamina, another reason is because they may look like something sexual (I can’t personally see a huge resemblance but asparagus is said to be phallic, and oysters resemble female genitalia). Oysters have scientifically proven potency, they are believed by many to keep men sexually active well into old age. The aroma of oysters is apparently quite the same as female pheromones and has been proven to be sexually arousing.

• Champagne - Champagne is associated with celebrating and wealth, both aphrodisiacs in themselves, and small amounts of alcohol are proven to lower inhibitions and increase sexual desire.
